With Trinity Landing opening soon, we are excited to share the delicious details of our upcoming dining experience. Jeremy Haley, Trinity Landing’s executive chef, plans to bring enticing entrees to our residents’ tables. Get to know Chef Jeremy for a taste of what is to come at Trinity Landing.
Chef Jeremy’s appetizing background
Jeremy loved cooking from a very young age. “I watched my mom in the kitchen, I admired her work ethic more than anything. She was a remarkable example for me growing up, an inspiration. Just by watching her, I became interested in culinary [arts] and cooking. I started working in restaurants at a young age. I washed dishes at 16 and moved my way up the ranks.”
In an effort to hone his craft, Jeremy traveled the world, experiencing new flavors and techniques. “My passion took me to many places, including Italy, Austria, and Ireland.” But it was his time in Europe that most influenced the culinary style that he will share with residents of Trinity Landing. “When I was in Europe, I had the opportunity to visit specialty shops. It felt like a farmers market every day,” he explained. This inspired Jeremy’s love for the incorporation of local and fresh ingredients in each of his dishes.
To that end, Jeremy continued to follow his passion and enrolled as a full-time student at Le Cordon Bleu Culinary Institute in Scottsdale, AZ. He worked full-time as the Executive Chef of Beau Regarde while attending school. This experience introduced Cajun cuisine to his repertoire. Jeremy boasts that he makes a “mean gumbo.”
The community is thrilled to welcome someone so obviously passionate about cooking. “I love everything about the kitchen and everything about food—there are so many things about it that are entertaining to me. I think of cooking as an art — combining techniques, fresh and seasonal flavors with seasonings and spices,” Jeremy explained.
Delectable dining options at Trinity Landing
Chef Jeremy has exciting plans for the dining options soon to be available at our waterside community. Residents will be able to choose from a variety of venues, all without having to leave the community. At the Boardwalk Bistro, located at the entrance of the Town Center, you’ll find delicious baked goods, smoothies, sandwiches, or other snacks. This modern bistro features an airy design with high ceilings and natural light. Residents can enjoy their light fare at the sidewalk seating or relax within the bistro. Plus, with 24-hour complimentary self-serve house coffee and a sundry mart, residents can enjoy the fantastic eats any time of day. The bistro will also feature the fresh grinds of Counter Culture Coffee and will be staffed by full-time trained baristas.
Meanwhile, at the Portside Pub, Chef Jeremy aims to have “a lot of fun with small plates and unique bar cuisine.” This unique restaurant will feature a “sunken bar” and stone fireplace. Jeremy is busy meeting with local breweries and plans to host local favorites like Edward Teach and Mad Mole on tap. Portside Pub will also feature a full wine menu.
Marker 139 will be Trinity Landing’s main restaurant. This elegant but comfortable, full-service dining experience will offer something for everyone. It features an “action station,” an open kitchen so that residents can watch the chefs work with the pizza oven or sauté the catch of the day. Invite friends and family to join as you dine under the grand atrium in the center of the restaurant or in a booth tucked under the windows. Observe Chef Jeremy and his associates crafting delightful dishes, like parmesan-crusted halibut, shrimp and grits, or even a filet with fresh spring vegetables.
To continue offering innovative fare, Chef Jeremy’s goal is to feature small “set menus” with specials that change weekly or even daily. He plans to do this by using primarily local providers who grow different crops seasonally. Chef Jeremy said, “I’m a firm believer in fresh produce and utilizing what’s in your region.” Chef Jeremy has spent much of the time leading up to our opening meeting with local farms, wineries, and breweries to “feel the food, touch it, and see the process come to life.”
Enjoying the waterfront
If ever you feel like ordering food to go, Trinity Landing residents will have options available. Chef Jeremy plans to implement take-out orders in a very eco-friendly fashion. “Instead of utilizing Styrofoam™ or cheap cardboard, we’re going to provide containers that can be brought back, cleaned, and replaced once you do another take-out order.”
In addition to the various restaurants, he plans to offer catering services at our pavilion on the Intracoastal Waterway. Being so close to the waterfront, he is excited to cater special events, and offer early morning coffee for those who want to watch the sunrise. However, Chef Jeremy is most enthusiastic about forming bonds with the residents at Trinity Landing. “I’m excited to listen to them, talk with them, and discuss their needs. I’m not going to have a rotating door of people coming in and out of my restaurant. They’re all going to be regulars,” he explained.
